WThis is an easy take on a cocktail found on our latest menu. Designed as a party-sized pre-mixed which is loaded with tastes of the Christmas time, which makes it ideal for a festive gathering. Save the extra cordial you can use for brunch beverages, sweets, or to mix additional servings of this cocktail.

Yields 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Premix (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine all the items inside a pan, bring to a gentle boil, agitating until the sugar dissolves. After that, take off the heat allowing it to cool down fully. Pour into an clean bottle, seal keeping it in the fridge, it can be stored for around a month.
To make Premix: Mix every liquid ingredients in a sizeable container, allow it to infuse for an hour, then filter it preferably using muslin, so it's completely strained.
To serve: Add 85ml from the premix into a cocktail shaker packed with ice, and agitate gently for a minute until cold. Strain to a cold coupe glass or equivalent, decorate with the cranberries and finish by giving it a light spray with the mandarin essence over the top.
